So it was my birthday last week and true to form, Mr Nik made the mountains move to ensure I had the time of life. I dedicate this post to him as he planned the BEST surprise by organizing a mystery weekend away and I had no idea what I was doing, what I was eating, where or for how long or with who... All I was asked to do, was to take the Friday off and pack a bag. I can't believe he did so much [bless him!], I don't quite know where to begin...
So let's start from the top.

My birthday happened to have fallen on 'Steak Wednesday' at the cantine.
AND I gots me some free homemade cookies and soda. Result!! \m/
So just when I thought the day couldn't get any better. We had an intimate dinner with a few friends and of course, Mr Nik delivered a scrumptious 3 course dinner.
Starter: Simple parmesan bruschetta with balsamic glaze and truffle oil.
Squid ink spaghetti with tomato, chili and prawns. Topped with parsley and grated parmesan. This was simply superb
And the piece de résistance! My birthday cake = Mr Nik's homemade strawberry cheesecake. He made me the happiest girl in the world.
Just when I thought I was spoilt enough, the evening of the very next day, he presented me with my present: An itinery for my mystery day off...
"Friday 24th September. Wake up to Eggs Benedict."
He knows me sooo well!! Eggs Benedict is my most favourite breakfast dish EVER. Not only that, but he made the hollandaise sauce JUST how I like it. Deliciously yoke-like with a hint of mustard. YUM!
"After breakfast, we'll take the 11am train to Copenhagen. We'll check into your favourite hotel [Axel]. You can spend the afternoon shopping!"
"We head back to the hotel around 5 to get ready and dressed for a romantic dinner at Lêlê's. Just the two of us"
FAB! But little did I know that when we turned up, we were greeted with some of my best friends - most of whom I hadn't seen in AGES!!!

And here are my gorgeous girlfriends who haven't seen in months and months!!!! Anja, Inês and Christina - who live in Copenhagen, Malmö and Vejle respectively. Needlessly to say, for the 2 who don't live in Vejle, I havent seen in months! As for Christine, well, since she lives across the road from us, she's practically part of our furniture.
It was such a memorable night. Perfect to the final detail!! I usually don't get too emotional about these things, but that night I really felt incredibly blessed to be surrounded by such dear dear friends and to have Mr Nik as my husband. Jeez. I must have been some helluva saint in my past life to deserve blessings now.
For once, the food wasn't priority, but that's not to say that it wasn't good! There was a very good reason why Nik booked a table at Lêlê's. Just look at the starter platter... MMmmmmm... This is as good as Asian food gets in Denmark!
